Yummy!

IS IT SPRING YET?
Well I am waiting, in the meantime mazyweddings has been busy baking (not good for bikini preparation). For whatever reason I keep finding excuses to make this amazing cream cheese frosting with shaved orange rind in it:

1 oz Cream Cheese ( I used tofutti cream cheese)
1 Lb powered sugar ( I used trader joes all natural)
1 tea. vanilla ( or table of Tahitian Vanilla!)
I stick butter ( I used soy butter)
1 shaved mandarin orange

Besides that I have been busy networking at PUG meetings, taking a class at ICP, and designing my own honeymoon and wedding album! My sometimes second shooter, Virgil Stephens is getting married this fall(yeah!). So between the two of us this past & future season will be wedding mania! :-)
